Anti-Diabetes Chocolate Fondant Recipe

Ingredients:

  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/3 cup sugar-free chocolate chips
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons coconut oil
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350F° and grease 6 small ramekins with coconut oil.
  2. In a medium bowl, mix together the cocoa powder, coconut flour, almond flour, baking soda, and baking powder.
  3. In a saucepan, melt the chocolate chips, almond milk, coconut oil, honey or maple syrup, vanilla extract, and salt over low heat, stirring constantly, until the mixture is smooth.
  4. Stir the chocolate mixture into the dry ingredients until thoroughly combined. Divide the batter between the ramekins.
  5. Bake the fondants for 10-12 minutes or until the edges are set and the center is still slightly soft. Remove them from the oven and let them cool for 1-2 minutes before turning them out onto serving plates.
