Apple and Almond Shortbread Tart Recipe

Ingredients:

  • 1.5 cups of all-purpose flour
  • 0.5 cup of granulated sugar, divided into two parts
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter, softened at room temperature
  • 1/2 teaspoon of almond extract
  • 2 large apples, peeled, cored and sliced thinly
  • 1/2 cup of sliced almonds
  • 1/2 teaspoon of ground cinnamon
  • 1 tablespoon of cornstarch
  • 1 egg white

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Sift together the flour, 1/4 cup of sugar, and the salt into a medium bowl.
  3. In a large bowl, beat the butter and almond extract together with an electric mixer until light and fluffy.
  4. Add the dry ingredients and mix until crumbly. Press the dough into the bottom and up the sides of a 9-inch (23-cm) tart pan. Prick the bottom with a fork and chill for 20 minutes.
  5. Arrange the apple slices on top of the crust and sprinkle with almonds.
  6. In a bowl, whisk together the remaining sugar, cinnamon, and cornstarch. Sprinkle the mixture over the apples.
  7. Brush egg white over the exposed edges of the crust.
  8. Bake for 35-40 minutes or until the crust is golden brown and the filling is bubbly and the apples are tender. Let it cool down for 10-15 minutes. Cut the tart into wedges and serve warm or at room temperature.
