Apple Blossom Pie
Ingredients
- 2 cups all-purpose flour
- 1 tsp salt
- 2/3 cup vegetable shortening
- 5-6 tbsp cold water
- 6 cups peeled and sliced apples
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp all-purpose flour
- 2 tbsp butter
- 1 egg yolk, beaten
- 1 tbsp granulated sugar
Instructions
- In a large bowl, whisk together 2 cups of flour and 1 tsp of salt.
- Using a pastry blender, cut in 2/3 cup of vegetable shortening until the mixture resembles coarse crumbs.
- Add 5-6 tbsp of cold water, one tablespoon at a time, and mix until the dough forms a ball.
- Divide the dough in half, and roll out each half to fit a 9-inch pie plate. Set one crust aside.
- In a separate bowl, combine 6 cups of peeled and sliced apples, 1/2 cup of brown sugar, 1/2 tsp of cinnamon, 1/4 tsp of nutmeg, and 2 tbsp of flour. Mix well.
- Pour the apple mixture into the prepared pie crust, and dot with 2 tbsp of butter.
- Roll out the second crust, and place it over the apple mixture. Trim and crimp the edges.
- Brush the top of the pie with 1 beaten egg yolk, and sprinkle with 1 tbsp of granulated sugar.
- Make several slits in the top crust to allow steam to escape.
- Bake the pie at 375°F (190°C) for 50-60 minutes, or until the crust is golden brown and the filling is hot and bubbly.
- Remove the pie from the oven, and let it cool for at least 15 minutes before serving.
