Apple Cinnamon Crumble Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 2 cups apples, peeled, cored, and diced
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter, room temperature
  • 1 tsp cinnamon

Directions:

  1. Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish with butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Set aside.
  3. In a separate large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Add in the vanilla extract.
  4. Stir the dry mixture into the large mixing bowl, in 3 additions, alternating with the buttermilk. Begin and end with the dry mixture.
  5. Fold in the diced apples to the mixture with a spatula. Pour this batter into the prepared baking dish and set aside.
  6. For the crumble topping, mix together the flour, brown sugar, butter, and cinnamon until well combined and crumbly. Sprinkle the mixture evenly over the batter in the baking dish.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool before serving.
