Apple Compote “Marie-Claude”
Ingredients:
- 6-7 medium-sized apples, peeled and diced
- 1/2 cup brown sugar
- 1/2 cup apple juice
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
Instructions:
- In a medium saucepan, combine the diced apples, brown sugar, apple juice, lemon juice, cinnamon, nutmeg, and salt. Stir well to combine.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover the saucepan and simmer the mixture for about 20-25 minutes, or until the apples are tender and the liquid has thickened.
- Using an immersion blender or a food processor, blend the mixture until it’s smooth. If you like your compote chunkier, you can skip this step.
- Transfer the compote to a bowl and let it cool completely before serving.
Serving Suggestions:
- Serve the apple compote over vanilla ice cream, waffles, or pancakes for a delicious breakfast or dessert.
- Use it as a filling for tarts or pies.
- You can also serve it as a side dish with roasted pork or chicken.
