Apple Compote Triangles with Salted Butter Caramel Sauce
Ingredients
- 2 medium-sized apples, peeled and chopped
- 3 tablespoons of sugar
- 1 teaspoon of cinnamon
- 2 tablespoons of water
- 1 sheet of puff pastry, thawed
- 1 egg, beaten
- 1 tablespoon of coarse sugar
- 1 cup of sugar
- 6 tablespoons of butter
- 1/2 cup of heavy cream
- 1 teaspoon of salt
Instructions
Apple Compote
- In a saucepan, mix together the chopped apples, sugar, cinnamon, and water.
- Cook over medium heat until the apples are soft and the liquid has thickened, stirring occasionally. This should take about 15 minutes.
- Remove from heat and let cool.
Pastry Triangles
- Preheat your oven to 375°F (190°C)
- Unfold the puff pastry sheet onto a floured surface.
- Cut the sheet into 8 equal-sized triangles.
- Place a spoonful of the apple compote on one half of each pastry triangle, leaving a small border around the edges.
- Brush the beaten egg around the border of the pastry.
- Fold the other half of the pastry over the apple compote, creating a triangle.
- Use a fork to crimp the edges of the pastry and seal the triangle.
- Brush the top of each triangle with more beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes, or until the pastry is golden brown and has puffed up.
- Let cool for a few minutes before serving.
Salted Butter Caramel Sauce
- Heat the sugar in a heavy-bottomed saucepan over medium heat, stirring constantly.
- The sugar will start to melt and turn brown. Keep stirring until it is all melted and has turned a deep amber color. This should take about 10 minutes.
- Remove the saucepan from the heat and add the butter. Be careful as the mixture will bubble and steam vigorously.
- Stir in the heavy cream and salt until everything is combined.
- Put the saucepan back on the heat and simmer the caramel sauce for 2-3 minutes until it has thickened up.
- Remove from the heat and let it cool before using.
