Apple Rösti

Ingredients:

  • 2 large or 3 medium-sized apples, peeled and grated
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, lightly beaten
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • Vegetable oil for frying

Directions:

  1. In a large bowl, mix together the grated apples, flour, baking powder, cinnamon, salt, and black pepper until well combined.
  2. In a separate bowl, whisk together the eggs, milk, and melted butter. Pour the egg mixture into the apple mixture and stir until well combined.
  3. Heat a large skillet over medium-high heat and add enough vegetable oil to cover the bottom of the pan.
  4. Using a 1/4 cup measure, scoop the apple mixture into the hot skillet and flatten it with a spatula to form a pancake shape.
  5. Cook the rösti for 2-3 minutes on each side, or until golden brown and crispy.
  6. Transfer the cooked rösti to a paper towel-lined plate to drain any excess oil.
  7. Serve the apple rösti warm with sour cream or applesauce on top, if desired.
