Apricot clafoutis: easy recipe


Apricot Clafoutis

Ingredients:

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 3 large eggs, lightly beaten
  • 1 cup milk
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1 tbsp. unsalted butter, melted
  • 1-2 cups apricots, scooped and halved
  • 1/4 cup sliced almonds
  • powdered sugar, for garnish

Directions:

  1. Preheat the oven to 350°F. Grease a 9-inch pie dish or baking dish.
  2. In a medium mixing bowl, whisk together flour and sugar.
  3. Gradually add in eggs, milk, vanilla extract, salt, and melted butter whisking until smooth.
  4. Pour 1/3 of the batter into the prepared dish. Scatter apricots onto the bottom of the dish. Pour remaining batter over apricots.
  5. Sprinkle sliced almonds on top of batter.
  6. Bake for 40-45 minutes, or until puffed and golden brown on top, and a tester comes out clean in the center of the pancake.
  7. Let cool for a few minutes, and sprinkle with powdered sugar. Serve warm.
