Apricot Clafoutis
Ingredients:
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 3 large eggs, lightly beaten
- 1 cup milk
- 1/2 tsp. vanilla extract
- 1/4 tsp. salt
- 1 tbsp. unsalted butter, melted
- 1-2 cups apricots, scooped and halved
- 1/4 cup sliced almonds
- powdered sugar, for garnish
Directions:
- Preheat the oven to 350°F. Grease a 9-inch pie dish or baking dish.
- In a medium mixing bowl, whisk together flour and sugar.
- Gradually add in eggs, milk, vanilla extract, salt, and melted butter whisking until smooth.
- Pour 1/3 of the batter into the prepared dish. Scatter apricots onto the bottom of the dish. Pour remaining batter over apricots.
- Sprinkle sliced almonds on top of batter.
- Bake for 40-45 minutes, or until puffed and golden brown on top, and a tester comes out clean in the center of the pancake.
- Let cool for a few minutes, and sprinkle with powdered sugar. Serve warm.
