Apricot-coriander Millefeuille

Ingredients

  • 1 package (17.3 ounces) puff pastry, thawed
  • 1 cup apricot preserves
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped fresh mint leaves
  • 1/4 cup sliced almonds, toasted
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat oven to 400°F. Line two baking sheets with parchment paper.
  2. Unfold one pastry sheet onto each prepared baking sheet. Bake for 10-12 minutes until lightly golden brown. Allow to cool to room temperature.
  3. In a small bowl, combine the apricot preserves, cilantro, mint, and almonds.
  4. Place one cooled pastry sheet on a serving platter. Spread half of the apricot mixture over the pastry. Top with the second pastry sheet and spread the remaining apricot mixture on top.
  5. Whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the top pastry layer.
  6. Chill for at least an hour before serving.
