Apricot Tartlet: Gourmet Recipe
Ingredients
- 1 1/2 cups flour
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and chopped
- 1/4 cup ice water
- 4-5 ripe apricots, pitted and sliced
- 1/4 cup granulated sugar
- 1 tbsp unsalted butter, melted
- 1 tbsp honey
Instructions
- In a food processor, pulse together flour and salt. Add chopped butter and pulse until mixture resembles coarse crumbs.
- Gradually add ice water and pulse until dough comes together.
- Gather dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 375°F. Roll out dough on a floured surface to 1/8-inch thick. Cut out circles to fit into a muffin pan.
- In a bowl, mix together sliced apricots, sugar, melted butter, and honey.
- Add apricot mixture into each tartlet shell. Fold over any excess dough.
- Bake for 25-30 minutes or until crust is golden brown.
Serving Suggestions
