Ingredients

  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and chopped
  • 1/4 cup ice water
  • 4-5 ripe apricots, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp unsalted butter, melted
  • 1 tbsp honey

Instructions

  1. In a food processor, pulse together flour and salt. Add chopped butter and pulse until mixture resembles coarse crumbs.
  2. Gradually add ice water and pulse until dough comes together.
  3. Gather dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat oven to 375°F. Roll out dough on a floured surface to 1/8-inch thick. Cut out circles to fit into a muffin pan.
  5. In a bowl, mix together sliced apricots, sugar, melted butter, and honey.
  6. Add apricot mixture into each tartlet shell. Fold over any excess dough.
  7. Bake for 25-30 minutes or until crust is golden brown.

Serving Suggestions

This apricot tartlet makes an excellent dessert when served with a scoop of vanilla ice cream and a drizzle of honey on top. Alternatively, it can be served as a brunch dish with a side of fresh fruit and yogurt.
