Arnaud Lahrer’s Cheesecake

Ingredients

  • 1½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup butter, melted
  • 2 lbs. cream cheese, softened
  • 1 ½ cups sugar
  • ¼ cup cornstarch
  • 1 tbsp. vanilla extract
  • 4 eggs
  • 1 cup heavy whipping cream

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, ½ cup sugar and melted butter. Mix well and press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl beat cream cheese, 1 ½ cups sugar, cornstarch, and vanilla extract until light and fluffy. Add one egg at a time, beating well after each addition.
  4. Add heavy whipping cream and mix well.
  5. Pour mixture over the graham cracker crust and bake for 1 hour.
  6. Let it cool down for around 30 minutes and then refrigerate for 2 to 4 hours or until firm.
  7. Serve chilled.
