Artichokes with Hot Goat Cheese

Ingredients:

  • 4 large artichokes
  • 4 cloves garlic, minced
  • 4 ounces goat cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions:

  1. Cut off the stems of the artichokes, leaving about an inch of stem remaining. Cut off the top inch of the artichoke and remove the tough outer leaves until you reach the tender inner leaves. Cut the artichokes in half lengthwise.
  2. In a small bowl, mix together garlic, goat cheese, Parmesan cheese, mayonnaise, mustard, black pepper, salt, and lemon juice. Set aside.
  3. Fill a large pot with salted water and bring to a boil. Add the artichokes and cook for about 15-20 minutes or until the leaves are tender and easily removed. Drain and let cool for a few minutes.
  4. Preheat oven to 375°F (190°C).
  5. Using a spoon, remove the fuzzy choke from the center of each artichoke half. Place the artichoke halves in a single layer in a large baking dish.
  6. Spoon the cheese mixture evenly over each artichoke half.
  7. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the artichokes are heated through.

Serving Suggestions:

Serve hot artichoke halves with crispy bread slices, a crispy green salad and a full-bodied red wine for a deliciously sophisticated meal.
