Asparagus Soup Recipe

Ingredients:

  • 2 lbs. fresh asparagus, trimmed and chopped into small pieces
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat.

  9. Stir in the heavy cream and season the soup with salt and pepper.
  10. Warm the soup over medium heat until heated through.
