AUVERGNE-STYLE LENTIL SALAD RECIPE

Ingredients

  • 1 cup French green lentils
  • 1 bay leaf
  • 1 small onion, chopped
  • 1 small carrot, chopped
  • 1 small celery stalk, chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup minced parsley
  • 1/4 cup minced chives
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and place them in a pot with the bay leaf, onion, carrot, celery, and enough water to cover by about an inch. Bring to a boil, reduce heat, and simmer until the lentils are tender, about 20-25 minutes.
  2. Drain the lentils and discard the bay leaf and vegetables. Transfer the lentils to a large bowl.
  3. In a small bowl, whisk together the olive oil, vinegar, mustard, garlic, salt, and pepper. Pour the dressing over the lentils.
  4. Add the parsley and chives to the bowl and toss everything together until the lentils are evenly coated in the dressing and herbs.
