Avocado, Spinach and Artichoke Salad with Green Sauce Recipe

Ingredients:

  • 2 ripe avocados, diced
  • 1 cup spinach leaves, chopped
  • 1 can of artichoke hearts, drained and chopped
  • 1/4 cup chopped fresh cilantro
  • For the green sauce:
    • 1/4 cup plain Greek yoghurt
    • 1/4 cup mayonnaise
    • 1/4 cup chopped fresh parsley
    • 2 cloves garlic, minced
    • 2 tbsp freshly squeezed lemon juice
    • 1/4 tsp salt

Instructions:

  1. In a large bowl, combine diced avocado, chopped spinach, chopped artichoke hearts and chopped cilantro.
  2. In a small bowl, whisk together yoghurt, mayonnaise, parsley, garlic, lemon juice and salt until smooth to make the green sauce.
  3. Pour the green sauce over the avocado mixture and toss gently to coat.
  4. Refrigerate for at least 30 minutes to allow the flavours to blend.
  5. Serve cold, garnished with extra cilantro leaves if desired.
