Ingredients

  • 1 cup all-purpose flour
  • 1 cup finely chopped hazelnuts
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, hazelnuts, and salt.
  3. In a separate bowl, cream the butter, sugar, and vanilla extract until light and fluffy.
  4. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  5. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  6. Bake for 12-15 minutes or until the edges are lightly golden brown.

  9. Once the cookies have cooled, pair them up by size and shape, then spread a small amount of melted chocolate onto the flat side of one cookie and sandwich it together with the flat side of the other cookie.
  10. Allow the chocolate to set before serving.
