Banana cake: salted butter caramel recipe

Banana Cake with Salted Butter Caramel Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk

Salted Butter Caramel

  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (180°C) and butter a 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking soda and salt; set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the mashed bananas.
  6. Incorporate the dry ingredients into the banana mixture, alternating with the buttermilk, until everything is well combined.
  7. Pour the batter into the prepared cake pan and bake for 35 – 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, invert it onto a wire rack to cool completely.
  9. While the cake is cooling, make the salted butter caramel. In a medium saucepan, heat the sugar over medium-high heat until it melts and turns amber in color, swirling the pan occasionally.
  10. Remove the pan from the heat and add the butter; whisk until the butter is melted and combined with the caramel.
  11. Slowly drizzle in the cream while whisking constantly. Stir in the sea salt.
  12. Let the caramel cool for a few minutes until it thickens slightly.
  13. Pour the caramel over the top of the cooled cake, allowing it to drip down the sides of the cake.
  14. Serve the banana cake with a scoop of vanilla ice cream and extra salted butter caramel sauce if desired.
