Banana, Ginger & Blueberry Muffins Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/2 cup mashed ripe bananas (about 1 medium banana)
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, white sugar, brown sugar, baking powder, baking soda, salt and ginger.
  3. In a separate mixing bowl, whisk together the vegetable oil and egg until well combined. Stir in the mashed bananas, milk and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Line a muffin tin with paper liners and divide the batter evenly between the cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
