  • 1/2 lb shrimp, peeled and deveined
  • 2 tbsp fish sauce
  • 1/4 tsp black pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onion

Instructions:

  1. In a large bowl, mix together rice flour, tapioca flour, water, and salt until smooth. Let the batter sit for 15 minutes.
  2. In a skillet, heat vegetable oil over medium heat. Add chopped mushrooms and shallots and cook until they are tender. Add ground pork and shrimp, stirring constantly until they are cooked through. Add fish sauce and black pepper, stirring to combine. Remove from heat and stir in cilantro and green onion.
  3. Heat a non-stick skillet over medium-high heat. Pour 1/4 cup of the batter into the skillet and swirl the pan around to coat the bottom. Cook for 1-2 minutes until the edges start to peel away from the skillet. Use a spatula to roll up the crepe and transfer it to a plate. Repeat the process with the remaining batter.
  4. Serve the banh cuon with the pork and shrimp filling on top and garnish with additional cilantro and green onion.
