Bar Ceviche Recipe

Ingredients:

  • 1 lb. fresh white fish (such as sea bass or snapper), skin removed and diced into small pieces
  • 1 red onion, finely diced
  • 1 red pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 jalapeno pepper, finely diced (optional)
  • 2 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a large bowl, combine the diced fish, red onion, red pepper, yellow pepper, jalapeno pepper (if using), garlic, and cilantro.
  2. Add the lime juice and olive oil and stir everything together until the fish is well coated.
  3. Season with salt and pepper to taste.
  4. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  5. Before serving, stir the ceviche and taste for seasoning, adding more salt and pepper if necessary.

Serving Suggestions:

Serve the ceviche chilled, either on its own or with tortilla chips. You can also serve it atop a bed of lettuce or in a lettuce wrap for a lighter option. For a heartier meal, serve with rice and beans.
