Beet and Mackerel Salad Recipe

Ingredients

  • 4 medium beets, cooked and diced
  • 1 can of mackerel fillets in olive oil, drained
  • 1/4 red onion, thinly sliced
  • 4 cups mixed salad greens
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, whisk together the white balsamic vinegar, olive oil, salt and pepper to make the dressing.
  2. Add the diced beets, sliced red onion and mixed salad greens to the dressing. Toss to combine.
  3. Flake the mackerel fillets over the top of the salad.
  4. Sprinkle the crumbled goat cheese and chopped walnuts over the top of the salad.
  5. Toss lightly to distribute all ingredients evenly.
