Beet and Mackerel Salad Recipe
Ingredients
- 4 medium beets, cooked and diced
- 1 can of mackerel fillets in olive oil, drained
- 1/4 red onion, thinly sliced
- 4 cups mixed salad greens
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 2 tablespoons white balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, whisk together the white balsamic vinegar, olive oil, salt and pepper to make the dressing.
