Beet Ravioli Recipe

Ingredients:

  • 2 medium-sized beets
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped parsley
  • 1 teaspoon lemon zest

Instructions:

  1. Preheat the oven to 400°F. Wash and trim the beets, leaving the skin on. Wrap them in aluminium foil and roast them in the oven for 45-60 minutes, or until they are tender.
  2. Remove the beets from the oven and let them cool. Once they’ve cooled down, peel the skin off and discard it.
  3. Grate the beets using a box grater or a food processor.
  4. In a large mixing bowl, combine flour, eggs, water, salt, pepper, and olive oil. Mix until you get a smooth, elastic dough. Cover with a plastic wrap and let it rest for 30 minutes.
  5. In another mixing bowl, combine the grated beets, ricotta cheese, parmesan cheese, chopped parsley, and lemon zest. Season with salt and black pepper to taste.
  6. On a floured surface, roll out the dough thinly and cut it into circles using a cookie cutter or a glass. Place a dollop of beet filling on one half of the circle, then fold over the other half to form a half-moon shape.
  7. Seal the edges of the ravioli carefully using a fork or your fingers, then place them on a floured baking sheet.
  8. In a large pot of salted, boiling water, cook the ravioli for 3-4 minutes, or until they float to the surface. Remove them with a slotted spoon and serve hot.
