Beet Salad Recipe

Ingredients:

  • 4 medium-sized beets
  • 2 tbsp olive oil
  • 2 cups mixed greens
  • 1/4 cup walnuts, chopped
  • 1/4 cup crumbled goat cheese
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Trim the ends of the beets and wrap them in foil.
  3. Roast the beets in the oven for 45 minutes to 1 hour, or until they are fork-tender.
  4. Remove the beets from the oven once done and let them cool.
  5. Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt and pepper in a bowl to prepare the dressing. Set it aside.
  6. Peel the beets using a paper towel and cut them into wedges..
  7. To assemble the salad, place the mixed greens in a large bowl. Add the beet wedges, chopped walnuts and crumbled goat cheese on top of the greens.
  8. Pour the dressing over the salad and gently toss everything together to combine.
  9. Serve the salad immediately and enjoy!
