Belle Epoque crepes from La Tour d’Argent
Ingredients:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1 1/4 cups whole milk
- 2 tablespoons granulated sugar
- 1/4 cup unsalted butter, melted
- 1 tablespoon orange blossom water
- 1/4 cup sliced almonds, toasted
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup orange juice
- 2 tablespoons Grand Marnier
- 1 tablespoon orange zest
- Powdered sugar for serving
Instructions:
- In a large mixing bowl, whisk together flour and salt.
- In a separate bowl, beat eggs with a fork until smooth. Add 1/4 cup of milk, 2 tablespoons of sugar, butter, and orange blossom water. Mix well.
- Add the egg mixture to the dry ingredients and whisk until the batter is smooth.
- Add the remaining 1 cup of milk and whisk until the batter is smooth and well combined.
- Cover the batter and let it rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Brush with butter.
- Add 1/4 cup of batter to the skillet. Roll the skillet around so that the batter covers the whole bottom of the skillet.
- Cook the crepe until the edges start to brown, and then flip the crepe with a spatula or by tossing it in the air. Cook for another 10 seconds. Remove the crepe to a plate and repeat the process with the rest of the batter, re-buttering the skillet each time.
- To make the sauce, melt butter in a saucepan over medium heat. Add sugar, orange juice, Grand Marnier, and orange zest. Bring to a boil and reduce the heat. Simmer and stir occasionally until the sauce thickens.
- Stack the crepes in a pile on a serving plate. Pour the orange sauce over the top. Garnish with sliced toasted almonds and dust with powdered sugar.
