Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, at room temperature
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup candied fruits, chopped (mix of glaced cherries, mixed peel, and crystallized ginger)
  • 1/4 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Add dry ingredients to wet mixture, alternating with milk, until dough is formed. Mix in chopped candied fruits.
  6. Roll out dough on a floured surface to 1/4 inch thickness. Cut out biscuits using a cookie cutter or a glass. Place on a prepared baking sheet.
  7. Bake for 12-15 minutes, or until lightly golden around the edges.
  8. Allow to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
