Biscuits with Lemon Jam
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3/4 cup milk
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup lemon jam
Directions:
- Preheat the oven to 400°F (204°C).
- In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.
- Add in the butter and use a pastry cutter or your fingers to cut it into the flour mixture until it resembles coarse meal.
- In a separate bowl, whisk together the milk, sugar, egg, and vanilla extract.
- Add this mixture to the dry ingredients and stir until just combined. Do not overmix, or the biscuits will become tough.
- Turn the dough out onto a floured surface and knead gently a few times until it comes together.
- Roll out the dough to about 1/2 inch thickness.
- Using a biscuit cutter, cut out biscuits and place them onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the biscuits are golden brown.
- Allow to cool completely on a wire rack.
- Once the biscuits have cooled, spread a generous amount of lemon jam on the bottom half of each biscuit.
- Place the top half of the biscuit on the jam, and serve.

These biscuits with lemon jam are buttery, flaky, and tangy all at once. The biscuit itself is the perfect base for the bright, citrusy jam. This recipe is a great way to use up any excess lemons you may have on hand and is a delicious way to elevate a classic breakfast or brunch dish.
