Blueberry Cheesecake: Gourmet Recipe
Ingredients:
- 1 and 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 and 1/4 cups granulated sugar
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 1 pint fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 cup water
Instructions:
- Preheat the oven to 350°F (180°C). In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until well combined. Pour the mixture into a 9-inch springform pan and press down to form a crust. Bake for 10-12 minutes, then remove from the oven and set aside.
- In a separate mixing bowl, beat the cream cheese and 1 and 1/4 cups of granulated sugar with an electric mixer until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the mixture onto the crust in the springform pan and smooth out the top with a spatula.
- In a small saucepan, combine the blueberries, 1/4 cup of granulated sugar, cornstarch, and water. Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat and simmer for about 5 minutes until the mixture thickens and the blueberries burst.
- Pour the blueberry mixture over the cheesecake and use a spatula to spread the mixture evenly. Place the cheesecake in the fridge to cool for at least 4 hours or overnight. Serve chilled and enjoy!
