Blueberry Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 cup blueberries
  • Additional butter or oil for cooking
  • Maple syrup for serving

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, beaten egg, and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix just until combined.
  4. Fold in the blueberries.
  5. Heat a non-stick pan or griddle over medium heat. Once hot, add a small amount of butter or oil.
  6. Using a 1/4 cup measuring cup, add the batter to the pan to form pancakes. Cook until bubbles form on top, then flip and cook until golden brown on the other side. Repeat with remaining batter.
  7. Serve hot with additional butter, maple syrup and extra blueberries if desired.
