Blueberry Tartlets
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup fresh blueberries
- 3 tablespoons cornstarch
- 1/4 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
Instructions:
- Preheat oven to 350°F (175°C).
- In a medium mixing bowl, whisk together flour and sugar. Add chilled butter and using a pastry cutter or your fingers, mix until pea-sized crumbs form.
- Divide the dough into 6-8 equal parts and shape them into small flat discs. Press them into the bottom and up the sides of a muffin tin.
- Bake in the preheated oven for 15-17 minutes or until lightly golden. Remove and let cool while preparing the filling.
- In a small saucepan, mix together cornstarch and sugar. Stir in water and lemon juice and cook over medium heat until mixture thickens and becomes translucent.
- Add blueberries and stir well. Cook for another 2-3 minutes while stirring frequently.
- Spoon the blueberry mixture into the tartlet shells, filling them evenly.
- Return the tin to the oven and bake for another 10-12 minutes or until the filling is set.
- Remove from oven, let cool for 10-15 minutes, and then remove individual tartlets from the tin using a small knife or spatula.
These blueberry tartlets are best served warm, with a dollop of whipped cream or vanilla ice cream on top. They also make a great dessert for any fancy dinner party or celebration, as they look beautiful and taste absolutely delicious!
