Blueberry tartlets – Delicious


Blueberry Tartlets

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup fresh blueberries
  • 3 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together flour and sugar. Add chilled butter and using a pastry cutter or your fingers, mix until pea-sized crumbs form.
  3. Divide the dough into 6-8 equal parts and shape them into small flat discs. Press them into the bottom and up the sides of a muffin tin.
  4. Bake in the preheated oven for 15-17 minutes or until lightly golden. Remove and let cool while preparing the filling.
  5. In a small saucepan, mix together cornstarch and sugar. Stir in water and lemon juice and cook over medium heat until mixture thickens and becomes translucent.
  6. Add blueberries and stir well. Cook for another 2-3 minutes while stirring frequently.
  7. Spoon the blueberry mixture into the tartlet shells, filling them evenly.
  8. Return the tin to the oven and bake for another 10-12 minutes or until the filling is set.
  9. Remove from oven, let cool for 10-15 minutes, and then remove individual tartlets from the tin using a small knife or spatula.

These blueberry tartlets are best served warm, with a dollop of whipped cream or vanilla ice cream on top. They also make a great dessert for any fancy dinner party or celebration, as they look beautiful and taste absolutely delicious!
