Ingredients:

  • 1 pound salted cod, soaked overnight
  • 2 cups mashed potatoes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley
  • 1/2 tsp black pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • vegetable oil for frying

Instructions:

  1. Drain and rinse the soaked cod and place it in a large pot. Cover with water and boil for 20 minutes or until the cod flakes easily with a fork.
  2. Drain the cod and let it cool to room temperature. Then, remove any skin and bones and flake the fish into small pieces.
  3. In a large bowl, mix together the mashed potatoes, chopped onion, minced garlic, chopped parsley, and black pepper until well combined. Add the flaked cod and mix well.
  4. Take a tablespoonful of the cod mixture and shape it into a ball. Repeat until all the mixture is used.
  5. Dip each ball into the beaten eggs and then into the breadcrumbs, making sure it is coated well.
  6. Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the cod balls in batches for 3-5 minutes or until golden brown and crispy on the outside. Drain on paper towels.
  7. Serve the cod balls hot with lemon wedges or a garlic mayonnaise dip.
