Ingredients:
- 1 pound salted cod, soaked overnight
- 2 cups mashed potatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped parsley
- 1/2 tsp black pepper
- 2 eggs, beaten
- 1 cup breadcrumbs
- vegetable oil for frying
Instructions:
- Drain and rinse the soaked cod and place it in a large pot. Cover with water and boil for 20 minutes or until the cod flakes easily with a fork.
