Ingredients

  • 1 large eggplant
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 cup all-purpose flour
  • Salt and pepper, to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup olive oil

Directions

  1. Preheat the oven to 375F.
  2. Cut off the top and bottom of the eggplant and discard. Cut the eggplant into 1/2 inch rounds.
  3. In a bowl, whisk together the eggs and set aside.
  4. In another bowl, mix together the breadcrumbs, Parmesan cheese, salt, and pepper. Set aside.
