Ingredients
- 1 large eggplant
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 cup all-purpose flour
- Salt and pepper, to taste
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup olive oil
Directions
- Preheat the oven to 375F.
- Cut off the top and bottom of the eggplant and discard. Cut the eggplant into 1/2 inch rounds.
- In a bowl, whisk together the eggs and set aside.
- In another bowl, mix together the breadcrumbs, Parmesan cheese, salt, and pepper. Set aside.
