Bricks of Sea Mullet Fillet with Espelette Pepper and Red Pepper Coulis
Ingredients:
- 4 sea mullet fillets, skin removed
- 2 tablespoons olive oil
- Espelette pepper, to taste
- 1 red bell pepper, roasted and peeled
- 1/4 cup vegetable broth
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Place the sea mullet fillets on a baking tray lined with baking paper.
- Drizzle the olive oil over the fillets and season with the Espelette pepper.
- Bake for 10-12 minutes, or until the fillets are cooked through.
- Meanwhile, in a blender, combine the red pepper, vegetable broth, smoked paprika, salt and pepper. Blend until smooth.
- Once the fish is cooked, remove from the oven and allow to cool for a couple of minutes.
- Using a fork, break the fillets into large flakes.
- Place the flakes in a small rectangular dish, pressing the flakes to shape and form a brick shape.
- Reheat the coulis if necessary and spoon over the top of the bricks.
