Brioche Cake with Apples

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/4 cup cold water
  • 2 Granny Smith apples, peeled, cored and thinly sliced
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon unsalted butter, melted
  • 1 egg, beaten

Directions:

  1. Preheat oven to 375°F. Grease an 8-inch cake pan with nonstick spray.
  2. In a large bowl, whisk together flour, salt and sugar. Add butter and use your fingers to incorporate into the flour mixture until it becomes a sandy texture.
  3. Add water and mix until just combined. Shape into a ball and flatten into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a medium bowl, toss apples with brown sugar and cinnamon.
  5. Roll the dough into a 12-inch circle and transfer to the prepared cake pan.
  6. Arrange the apple slices in a circular pattern over the dough, leaving a 1-inch border around the edge.
  7. Brush the melted butter over the apples.
  8. Brush the beaten egg on the edges of the dough.
  9. Bake for 35-40 minutes or until golden brown and the apples are tender.

Serving Suggestions:

Serve the brioche cake with apples warm or at room temperature. Add a dollop of whipped cream or a scoop of vanilla ice cream to make it even more decadent! This cake is perfect for brunch or a sweet afternoon treat. Enjoy!
