Bulgur Salad with Tomatoes, Beans and Peaches

Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 2 ripe peaches, pitted and sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Add bulgur and water to a medium-sized saucepan and bring to a boil. Reduce heat to low and simmer for 10-12 minutes or until the water is absorbed and the bulgur is tender. Remove from heat and let cool.
