Bulgur Tabbouleh: Winter Recipe

Ingredients:

  • 1 cup bulgur wheat
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 3 green onions, thinly sliced
  • 1 small cucumber, seeded and diced
  • 1 small red bell pepper, seeded and diced
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Place the bulgur wheat in a large bowl and cover with boiling water. Let stand for about 15 minutes, or until the bulgur is tender and has absorbed the water.
  2. Drain any excess water from the bulgur wheat and transfer it to a large serving bowl. Add the parsley, mint, green onions, cucumber, and red bell pepper. Toss to combine.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the bulgur salad and toss well to coat. Adjust seasoning to taste.
