Bulgur Tabbouleh: Winter Recipe
Ingredients:
- 1 cup bulgur wheat
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 3 green onions, thinly sliced
- 1 small cucumber, seeded and diced
- 1 small red bell pepper, seeded and diced
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup olive oil
- Salt and freshly ground black pepper to taste
Instructions:
- Place the bulgur wheat in a large bowl and cover with boiling water. Let stand for about 15 minutes, or until the bulgur is tender and has absorbed the water.
- Drain any excess water from the bulgur wheat and transfer it to a large serving bowl. Add the parsley, mint, green onions, cucumber, and red bell pepper. Toss to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the bulgur salad and toss well to coat. Adjust seasoning to taste.
