Cake with Yogurt, Lemon, Olive Oil Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp lemon zest
  • 1/2 cup Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350F. Grease and flour a 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the sugar, eggs and lemon zest until pale and frothy, about 2 minutes.
  4. Whisk in the yogurt, olive oil and vanilla extract until smooth.

  6. Pour the batter into the prepared pan and bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
