Cannoli Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, softened
  • 1/4 cup sweet Marsala wine or white wine
  • 1 egg white
  • 1 egg, beaten
  • 1/2 cup ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pistachios
  • 1/4 cup mini chocolate chips
  • Vegetable oil, for frying

Instructions:

  1. In a medium bowl, whisk together flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  2. In a small bowl, whisk together Marsala wine and egg white. Add to flour mixture and stir until a dough forms.
  3. Knead dough on a lightly floured surface until smooth and elastic, about 5 minutes. Wrap in plastic and let rest at room temperature for 30 minutes.
  4. In a medium bowl, whisk together ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in pistachios and mini chocolate chips. Refrigerate until ready to use.
  5. Heat vegetable oil in a large heavy pot or deep-fryer to 375°F.
  6. Divide dough into 4 pieces. Roll out each piece on a lightly floured surface until very thin (about 1/16-inch thickness). Using a 3 1/2-inch cannoli cutter or biscuit cutter, cut 16 rounds from dough.
  7. Wrap each round of dough around a cannoli form, overlapping the edges slightly and pressing to seal. Fry in batches until golden brown, about 2 minutes per batch. Using tongs, transfer cannoli shells to paper towels to drain and cool.
  8. Carefully remove the cannoli shells from the forms and pipe the ricotta filling into each shell.
  9. Serve immediately or store in the refrigerator for up to 2 days.
