- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon grated lemon zest
Instructions
- Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Line a large baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, almonds, baking powder, and salt.
- In a separate bowl, beat eggs, vanilla extract, and lemon zest together.
- Add the egg mixture to the flour mixture and stir until a dough forms.
- Divide the dough in half and shape each half into a log about 12 inches long.
- Place the logs on the prepared baking sheet and flatten them slightly so that they are about 2 inches wide and 1 inch high.
- Bake for 25 to 30 minutes, or until the logs are lightly golden brown and firm to the touch.
- Remove the baking sheet from the oven and let the logs cool on a wire rack for 10 minutes.
- Using a serrated knife, cut the logs diagonally into 1/2-inch-wide slices.
- Arrange the slices on the baking sheet and bake for another 10 to 12 minutes, or until lightly golden brown and crisp.
- Remove the baking sheet from the oven and let the cantucci cool completely on a wire rack.
- Store the cantucci in an airtight container for up to 2 weeks.
