Caramel Flan: Tonka Bean Recipe

Ingredients

  • 1 cup granulated sugar
  • 1/3 cup water
  • 2 cups milk
  • 1 tonka bean, grated
  • 5 large eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F and bring a pot of water to a boil on the stove.
  2. In a heavy-bottomed saucepan, combine 1 cup of granulated sugar and 1/3 cup of water.
  3. Cook over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture turns a deep amber color, about 10 minutes.
  4. Pour the hot caramel into a 9-inch round cake pan. Tilt the pan to coat the bottom and sides, and set aside.
  5. In a medium saucepan, heat 2 cups of milk and the grated tonka bean over medium heat until small bubbles form around the edges.
  6. Remove from heat and let sit for 10 minutes to steep.
  7. In a large mixing bowl, whisk together 5 large eggs, 1/2 cup of granulated sugar, 1/2 teaspoon of vanilla extract, and a pinch of salt.
  8. Slowly pour the hot milk into the egg mixture, whisking constantly.
  9. Pour the custard mixture over the caramel in the prepared pan.
  10. Carefully place the cake pan into a larger baking dish and fill the dish with boiling water until it reaches about halfway up the sides of the cake pan.
  11. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  12. Remove from the oven and let cool to room temperature.
  13. Refrigerate for at least 1 hour or overnight.
  14. When ready to serve, place the cake pan in hot water for 1-2 minutes to loosen the caramel.
  15. Place a serving dish on top of the cake pan and invert the flan onto the plate.
  16. Slice and serve cold.
