Caramel Flan: Tonka Bean Recipe
Ingredients
- 1 cup granulated sugar
- 1/3 cup water
- 2 cups milk
- 1 tonka bean, grated
- 5 large eggs
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 325°F and bring a pot of water to a boil on the stove.
- In a heavy-bottomed saucepan, combine 1 cup of granulated sugar and 1/3 cup of water.
- Cook over medium-high heat, stirring occasionally, until the sugar dissolves and the mixture turns a deep amber color, about 10 minutes.
- Pour the hot caramel into a 9-inch round cake pan. Tilt the pan to coat the bottom and sides, and set aside.
- In a medium saucepan, heat 2 cups of milk and the grated tonka bean over medium heat until small bubbles form around the edges.
- Remove from heat and let sit for 10 minutes to steep.
- In a large mixing bowl, whisk together 5 large eggs, 1/2 cup of granulated sugar, 1/2 teaspoon of vanilla extract, and a pinch of salt.
- Slowly pour the hot milk into the egg mixture, whisking constantly.
- Pour the custard mixture over the caramel in the prepared pan.
- Carefully place the cake pan into a larger baking dish and fill the dish with boiling water until it reaches about halfway up the sides of the cake pan.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool to room temperature.
- Refrigerate for at least 1 hour or overnight.
- When ready to serve, place the cake pan in hot water for 1-2 minutes to loosen the caramel.
- Place a serving dish on top of the cake pan and invert the flan onto the plate.
- Slice and serve cold.
