Cardoon Gratin with Marrow Recipe

Ingredients:

  • 2 pounds of cardoon (cut into small pieces)
  • 1 marrow bone
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 2 cups of milk
  • 1 cup of grated Parmesan cheese (divided)
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Fill a large pot with water and bring it to a boil. Add the cardoon and cook for 15-20 minutes or until tender.
  3. Remove the cardoon from the pot and drain the excess water.
  4. Meanwhile, roast the marrow bone in the oven for 15-20 minutes.
  5. Melt the butter in a saucepan over medium heat. Add the flour and whisk until combined.
  6. Gradually add the milk and continue to whisk until the sauce thickens and coats the back of a spoon.
  7. Add half of the grated Parmesan cheese to the sauce and stir until melted.
  8. Season the sauce with salt and pepper to taste.
  9. Place the cooked cardoon in a baking dish. Pour the Parmesan sauce over the cardoon.
  10. Remove the marrow bone from the oven and scoop out the marrow. Distribute the marrow over the top of the cardoon and sauce in the baking dish.
  11. Sprinkle the remaining Parmesan cheese on top of the dish.
  12. Bake in the oven for 20-25 minutes until golden and bubbly.
  13. Remove from oven, let it cool slightly and serve immediately.
