Casarecce with Porcini Mushrooms and Sucrines Recipe

Ingredients:

  • 400g casarecce pasta
  • 300g porcini mushrooms, sliced
  • 2 cloves of garlic, finely chopped
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 2 tbsp. butter
  • 1/2 cup grated parmesan cheese
  • 2 handfuls of sucrines (or any bitter greens), roughly chopped
  • Salt and freshly ground black pepper

Instructions:

  1. Bring a large pot of salted water to a boil. Add the casarecce pasta and cook until al dente (around 8-10 minutes). Drain the pasta, reserving 1 cup of the pasta water.
  2. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant. Add the sliced porcini mushrooms and cook for 5 minutes until tender, stirring occasionally.
  3. Turn up the heat to high, pour in the white wine and let it bubble and reduce for 1-2 minutes. Add the sucrines and cook for 1-2 minutes until they wilt.
  4. Add the drained pasta to the pan and toss to combine. Add a splash of the reserved pasta water to loosen the pasta if needed. Turn off the heat and add the butter and grated parmesan cheese. Toss the pasta once more to combine the ingredients.
  5. Season the pasta with salt and freshly ground black pepper to taste. Serve immediately with additional parmesan cheese on top if desired.
