Cashew Chicken Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 cup cashews
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil

Instructions:

  1. Cut chicken into 1-inch pieces and season with salt and pepper.
  2. In a small bowl, whisk together cornstarch, soy sauce, oyster sauce, honey, sesame oil, and chicken broth. Set aside.
  3. Heat up a wok or a large skillet over high heat. Add vegetable oil and swirl to coat the pan.
  4. Add chicken, and stir constantly until browned, about 3-4 minutes. Remove from pan and set aside.
  5. In the same wok, add onion, garlic, and bell peppers. Stir fry for 2-3 minutes until softened.
  6. Add cooked chicken back to the wok. Pour in the sauce and stir fry for 1-2 minutes until sauce thickens.
  7. Add cashews and give it a quick stir. Remove from heat.
  8. Serve hot with steamed rice or noodles.
