Cat’s Tongues Recipe

These delicate, flat cookies are shaped like a cat’s tongue and are perfect for serving with tea or coffee. This recipe makes approximately 20 cookies.

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, cream the butter and sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg white and vanilla extract until well combined.
  4. In a separate bowl, sift together the flour and salt. Gradually add this to the butter mixture, mixing until the ingredients are fully incorporated.
  5. Transfer the dough to a piping bag fitted with a large, round tip.
  6. Pipe the dough onto the baking sheet in long, thin strips about 2 inches apart. Each cookie should be about 2-3 inches long.
  7. Bake for 8-10 minutes, or until the edges are slightly golden brown.
  8. Cool the cookies on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.
