Ingredients:

  • 4 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 large red bell peppers, sliced
  • 2 tbsp tomato paste
  • 2 large tomatoes, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 4 large eggs
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onions and garlic and cook for 2-3 minutes until soft and fragrant.
  3. Add the sliced peppers and cook for another 5-7 minutes until they are soft and lightly charred.
  4. Add the tomato paste, chopped tomatoes, cumin, paprika, and salt to the skillet and stir well to combine.
  5. Cover the skillet and let the mixture cook for another 10-15 minutes until the sauce is thick and bubbly.
  6. Using a spoon, make four small wells in the sauce.
  7. Crack an egg into each well.
  8. Cover the skillet and let the eggs cook for about 5 minutes or until the whites are set and the yolks are still runny.
  9. Sprinkle chopped parsley over the chakchouka and serve hot.
