Chantilly, Pear & Chocolate Cake

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 ripe pears, peeled, cored and thinly sliced
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9-inch (23cm) springform cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the sugar and oil until well combined. Add in the eggs one at a time, followed by the vanilla extract, and mix until smooth.
  4. Slowly add the flour mixture to the egg mixture, alternating with the milk, and mix until just combined.
