Chaud-froid of Chocolate and Tangy Raspberries, Hazelnut Streusel

Ingredients:

  • 2 cups heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1/4 cup raspberry preserves
  • 1 cup raspberries
  • 1/2 cup hazelnuts, chopped
  • 1/4 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions:

  1. In a small saucepan, heat 1/2 cup of heavy cream over low heat until warm. Add the chopped chocolate and stir until fully melted and smooth. Remove from heat and set aside to cool to room temperature.
  2. In a medium bowl, mix the raspberry preserves and raspberries until fully combined. Set aside.
  3. Preheat the oven to 350°F.
  4. In a small bowl, mix the hazelnuts, granulated sugar, flour, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture is crumbly and the butter is evenly distributed.
  5. Spread the streusel mixture onto a baking sheet and bake for 10-12 minutes, until golden brown. Remove from the oven and set aside to cool.
  6. In a large mixing bowl, whip the remaining 1 1/2 cups of heavy cream until stiff peaks form.
  7. Once the chocolate mixture has cooled to room temperature, fold it into the whipped cream until fully combined.
  8. Take 4-6 individual serving dishes and spoon a layer of the raspberry mixture onto the bottom of each dish. Spoon the chocolate and cream mixture over the raspberries, filling each dish about 3/4 of the way full.
  9. Top each dish with a generous sprinkle of hazelnut streusel.
  10. Chill the dishes in the refrigerator for at least 30 minutes before serving.
