Cheese Empanadas Recipe
Ingredients
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter, cut into small cubes
- 1 egg
- 3 tbsp cold water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups grated cheese, preferably a mix of mozzarella and cheddar
- 1/4 cup minced onions
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 egg beaten with 1 tbsp water for the egg wash
Instructions
- In a bowl, combine flour and salt. Mix well. Add the butter and cut in until well incorporated.
- In a small bowl, beat an egg and water. Stir into the flour mixture until a dough forms. Knead the dough for a few minutes until it is smooth.
- Form dough into a ball and cover it with clingfilm. Place it in the fridge to chill for 20 minutes.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until they are soft and fragrant.
- Add grated cheese and black pepper. Stir until cheese is melted. Take skillet off the heat.
- Preheat oven to 400°F.
- Line a baking sheet with parchment paper.
- Roll out the dough into a thin sheet. Cut out circles with a cookie cutter or something similar.
- Place the circles on the prepared baking sheet. Fill each circle with a spoonful of cheese mixture. Fold the circle in half and crimp the edges with a fork.
- Brush each empanada with egg wash.
- Bake for 20-25 minutes or until golden brown.
Serve the empanadas hot or cold. They make a great appetizer or a small meal.
