Cheese empanadas – Delicious


Cheese Empanadas Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1 egg
  • 3 tbsp cold water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups grated cheese, preferably a mix of mozzarella and cheddar
  • 1/4 cup minced onions
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 egg beaten with 1 tbsp water for the egg wash

Instructions

  1. In a bowl, combine flour and salt. Mix well. Add the butter and cut in until well incorporated.
  2. In a small bowl, beat an egg and water. Stir into the flour mixture until a dough forms. Knead the dough for a few minutes until it is smooth.
  3. Form dough into a ball and cover it with clingfilm. Place it in the fridge to chill for 20 minutes.
  4. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until they are soft and fragrant.
  5. Add grated cheese and black pepper. Stir until cheese is melted. Take skillet off the heat.
  6. Preheat oven to 400°F.
  7. Line a baking sheet with parchment paper.
  8. Roll out the dough into a thin sheet. Cut out circles with a cookie cutter or something similar.
  9. Place the circles on the prepared baking sheet. Fill each circle with a spoonful of cheese mixture. Fold the circle in half and crimp the edges with a fork.
  10. Brush each empanada with egg wash.
  11. Bake for 20-25 minutes or until golden brown.

Serve the empanadas hot or cold. They make a great appetizer or a small meal.
