- Return the saucepan to the heat and, whisking constantly, cook until the mixture comes to a boil and thickens, about 2 minutes.
- Remove from the heat and whisk in the salt and nutmeg.
- Whisk in the egg yolks one at a time, whisking well after each addition.
- In a large bowl, using an electric mixer, beat the egg whites and cream of tartar at high speed until stiff peaks form.
- Stir one-quarter of the egg whites into the yolk mixture to lighten it, then gently fold in the remaining egg whites until no streaks remain.
- Gently fold in the Gruyère cheese.
- Spoon the mixture into the prepared dish and smooth the top.
- Bake until the soufflé is golden brown and puffed, about 25 to 30 minutes. Firm to the touch yet still soft in the center.
