Cheese Soufflé Recipe

Ingredients:

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 1/2 cups milk

  2. Melt the butter in a medium saucepan over medium heat. Add the flour and stir to combine. Cook, stirring constantly, for 2 minutes. Add the milk in a steady stream, whisking constantly to prevent lumps. Add the salt, black pepper, and cayenne pepper and cook for 5 minutes, stirring occasionally.
  3. Reduce the heat to low and add the cheese, stirring until melted and smooth. Remove from the heat and let the mixture cool slightly.
  4. In a large mixing bowl, beat the egg whites until stiff peaks form. Stir the egg yolks into the cooled cheese mixture.
  5. Gently fold the beaten egg whites into the cheese mixture until no white streaks remain.
  6. Pour the mixture into the prepared soufflé dish. Run a knife around the edge of the mixture to help it rise evenly.
  7. Bake for 25 to 30 minutes until the soufflé is lightly browned and has risen about 2-3 inches above the rim of the dish.
  8. Remove from the oven and serve immediately.
