Ingredients:

  • 1½ cups Graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine Graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Put in the freezer while making the filling.
  3. In a stand mixer, beat cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in vanilla and sour cream until well combined.
  4. Pour the filling mixture into the crust. Bake for 20-25 minutes or until the cheesecake is set in the center and lightly golden around the edges.
  5. Remove from the oven and let the cheesecake cool to room temperature. Cover and refrigerate for at least 2 hours or overnight before serving.
